…we sold this cookie the way McDonald’s sold burgers: They flew out the door. Since day one at The Commissary, a jar of these cookies sat up front by the cashier as one last temptation for the customer. They really were irresistible just ask any of the cashiers, since they’re the ones who got to snack on any broken cookies. One always encountered people munching (or furtively nibbling) these cookies on the streets around the restaurant.

OATMEAL CHOCOLATE CHIP WALNUT COOKIES
Makes about 4 dozen
1 cup unsalted butter, softened
1 cup brown sugar
1 cup white sugar
2 teaspoons vanilla extract
2 tablespoons milk
2 eggs, lightly beaten
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 1/2 cups old-fashioned oats (not instant)
12 ounces semisweet chocolate chips (2 cups)
1 1/2 cups chopped walnuts
Preheat the oven to 350′. Cream the butter with the sugars in a mixer or by hand. Add the vanilla, milk, and eggs. Add the flour, salt, baking soda, and baking powder to the creamed mixture and beat to combine. By hand, stir in the oats, chips, and nuts. Drop 1 1/2” apart on greased cookie sheets. Bake for 10-12 minutes. Let sit 1 minute, then remove to cooling racks.
