Sweet Corn and Pepper Salsa
3 ears corn, husked and cleaned
1/2 small green pepper, finely chopped
1/2 small red pepper, finely chopped
2 scallions, chooped, green and white parts
2 garlic cloves, chopped fine
4 teaspoons lime juice
2 teaspoons chopped fresh mint
1 teaspoon olive oil
1/2 teaspoon salt
1/8 teaspoon pepper
1. Bring a large pot of lightly salted water to a boil. Add corn and cook for 3 minutes. Remove corn and allow to cool.
2. Over a medium bowl, scrape a corncob with a knife on all sides to release kernels and milky residue: repeat with remaining corn.
3. Combine corn with peppers, scallions, garlic, lime juice, mint, olive oil,salt & pepper. Toss to combine.
Yields 2 cups
