You know you have been waiting for it…..

Fresh local corn is finally here! Buy it every week at your local farm stand to be sure you get the freshest available. Corn can be prepared in endless recipes from sweet to savory. Try this simple Sweet Corn and Pepper Salsa from At Home by Steve Poses. Serve it with homemade or store bought tortilla chips. Take it to your picnic and share it with your friends.

Sweet Corn and Pepper Salsa
3 ears corn, husked and cleaned
1/2 small green pepper, finely chopped
1/2 small red pepper, finely chopped
2 scallions, chooped, green and white parts
2 garlic cloves, chopped fine
4 teaspoons lime juice
2 teaspoons chopped fresh mint
1 teaspoon olive oil
1/2 teaspoon salt
1/8 teaspoon pepper

1. Bring a large pot of lightly salted water to a boil. Add corn and cook for 3 minutes. Remove corn and allow to cool.

2. Over a medium bowl, scrape a corncob with a knife on all sides to release kernels and milky residue: repeat with remaining corn.

3. Combine corn with peppers, scallions, garlic, lime juice, mint, olive oil,salt & pepper. Toss to combine.

Yields 2 cups
